As the source of life, water has attracted the human mind from ancient times as nothing excites us more than life. Water associates with every single living thing on the planet. In the opinion of Russian scientist V.I.Vernadsky, biosphere water is integral self-organizing open system sustaining life on Earth. All living organisms contain water from 98% to 75%. The amount of water in a human body more than 50%. Brain contains most of it – 90%, blood about 81%, muscles – 75%. Skin and liver are composed of water by 70%. Even bones have 20% of water. Water concentration exceeds concentration of any other substance in the body by about million of times. This is the most widespread and common substance in the world that we come across every day throughout all our lives, but at the same time it is the most important and the most unique substance known to science.
Water is very unusual due to its physical and chemical properties. This is the most abnormal substance in nature.
First and most amazing quality of water is that it is the only substance on the planet that can be in any of the three phases under normal temperature and pressure conditions: solid, liquid and gaseous.
Water has immensely high heat capacity as compared with other liquid and solid substances — 4.18 J/g*K. Thus, during the night time, as well as during the transition period from summer to winter water slowly cools, and during the day or the transition from winter to summer water heats just as soon being the temperature regulator on the Earth.
Another water anomaly is extremely high latent heat of evaporation and latent heat of fusion, i.e. the amount of heat necessary to turn liquid into vapor and ice into liquid. For instance, water latent heat of evaporation is almost 8 times higher than that of alcohol, and latent heat of fusion is 27 times higher.
Water freezing and boiling points are another amazing and absolutely unexpected peculiarity. If we take a look at hydrogen compounds with other substances – sulfur, selenium, tellurium – we’ll be observing the following pattern: the higher molecular weight of a compound is, the higher its freezing and boiling point. For instance, hydrogen compound with tellurium (molecular weight 130) — (-51 )/(-4)С, with selenium (81) – (-64)/(-42)С, with sulfur (34) –(-82)/(-61)С, but with oxygen (i.e. water), the freezing point is 0°C, and the boiling point is 100°C with molecular weight 18.
Yet more amazing and no less unexpected water property is the change of its density depending a temperature change. Water density during its transition from solid to liquid state does not decrease as seen in other substances, but increases thus preventing the water basins from freezing up to the bottom.
Water is highly reactive substance. A unique solvent, it dissolves more salts and other substances than any other liquid, it oxidizes nearly all metals and destroys the hardest rocks.
Water also has catalytic capacity. In absence of moisture many reactions are not possible.
There are many other water abnormalities: heat conductivity, dependence of dielectric capacity on pressure, self-diffusion coefficient.
A question arises: how can all these abnormalities be explained?
According to the modern knowledge, explanation rests on fact that water molecule form specific ordered structures. Water is not just a molecule consisting of two atoms of hydrogen and one atom of oxygen. Due to a shift in 2 electrons of hydrogen atoms towards oxygen atom the water molecule is a dipole with two poles – plus and minus. Thanks to such dipole structure (negative and positive poles are attracted) water molecules unite into associates — various geometric figures with 2-6 molecules that dissipate in most cases in a split second forming new compounds. It was proved that water contains nanosize hollowness, as well as stable long-living bulk associates of water molecules capable of information-energy interaction with environment, store and transfer accumulated energy and information by the laws of quantum physics. Water is a dynamically fractal (structurally ordered) heterogeneous system where water molecules constantly transit from a free state into bound (associated) phase. All physical and chemical water properties are determined by the state and structural organization of its associated phase. Exactly this phase is the core in water formation as a substance in general, its “trademark”. Free water contains single and weakly bound low-density disordered groups consisting of 2-6 molecules. Due to electrostatic interaction these groups may be united and may form high-density associates of associated. X-ray structure analysis it was found out that its basic units are pentamers (“quality mark” in the USSR) of water molecules united into the sphere. Inside the sphere due to common electrons very strong intramolecular hydrogen bonding is formed, and outside on the sphere surface – intermolecular bonding, that is less strong.
Due to a difference in intrinsic and extrinsic charges of the sphere, local field gradient with intensity up to 100000000 V/cm is formed attracting free electrons from atmosphere and accumulates on the external border of the associate and in the nearest nanosize hollowness. Thus, water accumulates energy that can be further given to the organism. The more associates there are, the more energy can be accumulated by water. In nature the share of associates amounts to 0.04%. Using various means this concentration may be raised to 1 – 2%, but in the human body the share of associated water amounts to 10-20%.
